<p style="color: #000000;">Proiectul a fost demarat din dorinta actionarilor City Grill de a crea o structura corporatista moderna. Grupul avea (si are) o cultura corporatista foarte puternica, echipa de management (nivel de top si middle) avand experienta indelungata in cadrul City Grill.</p>
<p>Domeniul HORECA este unul foarte solicitant in care este nevoie de prezenta permanenta din partea managementului in locatie. Este un business dependent de oameni.</p>
<p>Existau mai multe programe de training de management care se desfasurau, cat si programe de formare continua in cadrul locatiilor.</p>
<p>La nivel de angajati City Grill este considerat un formator, fiind o adevarata scoala. Toti cei care au lucrat vreodata in City Grill recunosc nivelul inalt al exigentelor si standardizarii.</p>
<p style="color: #000000;">Se dorea trecerea la un nivel superior de operare prin standardizarea si formalizarea procedurilor de lucru si implementarea unor instrumente noi (precum manualul operational). Totodata, avand in vedere expansiunea rapida a grupului, aceste instrumente aveau sa usureze integrarea noilor angajati in structura City Grill, mai ales in pozitii de middle si top management.</p>
<p style="color: #000000;">Desi majoritatea locatiilor sunt detinute direct de catre companie, se dorea si extinderea conceptului prin intermediul francizei, iar franciza presupune o foarte riguroasa standardizare si procedurizare.</p>
<h4>Rezultatul</h4>
<p style="color: #000000;">S-a petrecut o luna de zile in training operational, pentru a intelege business-ul din interior. Urmand o matrice de pregatire in stil McDonald&#8217;s, s-au experimentat toate rolurile, de la ajutor de bucatar, la sef de tura si manager de locatie.</p>
<p style="color: #000000;">S-au facut o serie de interviuri cu top si middle management-ul. S-au compilat datele financiare pentru a ajunge la un model de business de referinta (asa numitul benchmark), si care se poata fi folosit in negocierile cu potentialii francizati.</p>
<p style="color: #000000;">Dupa intelegerea in profunzime a fluxurilor operationale cat si a intreg modelului de business, s-a ajuns in ipostaza unde se putea concretiza manualul operational incluzand si unele masuri de imbunatatire si standardizarea a modului de operare.</p>
<p style="color: #000000;">Intreg pachetul de franciza a fost finalizat si implementat cu succes. In prezent locatiile City Grill au implementate ca si procedura de lucru aceste manuale.</p>
